Roast potato and sweet potato
Garlic roasted brussel sprouts – lots of crispy bits!
Fennel, apple and red onion drizzled with olive oil and balsamic vinegar and baked till caramelised
Eyes slightly bigger than one’s tummy.
Eat every skerrick of the delicious veggies but end up feeding half the pork to the dog and then rolling off to bed to recover.

Ok, so, NOMNOMNOM. I have not been in a cooking frame of mind lately but this has inspired me to do a roast this weekend. 🙂
Roasts are awesome, I don’t know why I don’t do them more often.
Roasted things always taste better! I’m embarrassed to say I’ve never cooked fennel but you’ve inspired me with this.
I had another bulb of fennel that didn’t get used so it’s gone into tonight’s beef in red wine casserole. I’m hoping it doesn’t end up tasting too weird.
