Last night’s dinner

Baked fennel, onion and apple, and garlic brussel sprouts with roast pork

Take:
One pork roast with perfect crackling (even if I do say so myself)
Roast potato and sweet potato
Steamed broccoli
Garlic roasted brussel sprouts – lots of crispy bits!
Fennel, apple and red onion drizzled with olive oil and balsamic vinegar and baked till caramelised

Add:
Eyes slightly bigger than one’s tummy.

Results:
Eat every skerrick of the delicious veggies but end up feeding half the pork to the dog and then rolling off to bed to recover.

    1. I had another bulb of fennel that didn’t get used so it’s gone into tonight’s beef in red wine casserole. I’m hoping it doesn’t end up tasting too weird.
