Beef and Barley Stew

On Thursday night I was faced with some defrosted steak, no shopping done, no plan and a mother-in-law coming for dinner. Corn, cucumber and capsicum salad

Purely so I don’t forget what I did: Tom’s birthday dinner last night was, by request from the birthday boy, nachos, and because I decided I wanted some extra veggies I grabbed these things: 1 420g can corn kernels drained1 lebanese cucumber, diced1/2 red capsicum, dicedolive oil, a drizzlewhite wine vinegar, a splashgarlic powder dried coriander leaves And made this: Corn, cucumber and capsicum salad And it was good. Pear and blue cheese salad

Last night my dinner was this salad on its own. Except I didn’t have any baby spinach to go with it. Tonight Adam wanted to bbq some steak so I when I went to the shops to acquire said steak I grabbed some spinach, pears and cheese and made it again.
